I am talking about food again, this time it’s more healthy but still really good. Last week I attended a media event at Corner Bakery. Look any type of business can do a media event and when its food involved you best believe my face is in the place. It has been crazy hot in the DMV area but Mother Nature was kind to us as we settled onto the patio of the Corner Bakery in Arlington, Virginia.
I’ve not been to a Corner Bakery in some time but back in my private industry days I used them to cater all of my meetings. The cookies were my absolute favorite. I would put them in the microwave for a few seconds and it was like heaven right in your mouth.
Chef Ric Scicchitano was our gracious host for the morning. He just so happens to be the Executive Vice President, Food & Supply Chain at Corner Bakery Cafe.
Corner Bakery is rolling out their new grilled flats and they do not disappoint. They have breakfast and lunch options. “Each of our flat breads are overstuffed, they should be messy and things should fall out.” – Chef Ric Scicchitano This is exactly what my inner fat girl wants to hear.
They rolled out the red carpet for us in grand fashion. Y’all know I love my hot tea so they started me off with a Chamomile Citrus tea. It was yummy, although I’m totally allergic to chamomile it’s my favorite. Nothing a little meds can’t fix.
Ham & Spinach Power Flat: Scrambled eggs, smoked ham, fresh spinach & cheddar and Parmesan cheeses
This event was a marathon and not a sprint. Yet it was hard to keep that in mind once the grilled flats started rolling out. I’m a lover of all things breakfast and bacon. You can get some bacon on yours.
Breakfast Power Flats are made to order and offer up and are perfect for breakfast on-the-go guest. . The Power Flats lineup includes options such as the Avocado & Spinach, Applewood Smoked Bacon and the new Ham & Spinach.
Chicken Caesar with all-natural grilled chicken, romaine, bruschetta tomatoes, Parmesan cheese and Caesar dressing (330 calories)
I’m a lover of all things chicken Caesar, I had a grilled chicken Cesar salad for lunch today. This was my second favorite.
BBQ Pork with pulled barbecue pork, tangy slaw, house-pickled red onions and avocado ranch dressing (320 calories)
When I see BBQ Pork on the menu of a non-BBQ establishment I immediately give it the side eye. I was pleasantly surprise when I bit into this BBQ flat. The meat was good and flavorful and the pickled red onions added a nice touch.
Caprese with fresh mozzarella, bruschetta tomatoes, arugula and Parmesan cheese (310 calories)
I didn’t try this one but the girls at my table said it was really good. I’m not a fresh mozzarella type of girl so I didn’t want all of that cheese in my mouth. If you are then you would probably love this.
Southwest Chicken with all-natural grilled chicken, zesty slaw, corn and tomato salsa, house-pickled jalapeños and avocado ranch dressing (280 calories)
There is a lot going on here but biting into this was a massive explosion of flavors erupting in my mouth. This was my favorite of them all. I wouldn’t normally order something like this off the menu. I so glad I tried it so I can be less judgmental of my eating habits the next time I’m out. sssssssssshhhh I will give you the recipe in a bit.
Blueberry Lemonade Baby Bundt
This amazing deliciousness is baked with blueberries, drizzled with lemonade and then icing. I’m a believer or warm pastries and this thang right here with a touch of warmth is what dreams are made of. Not only is this cake good but for every purchase Corner Bakery donates $0.10 to the No Kid Hungry Campaign. That $0.10 can feed a kid. This is how you justify the extra calories, it’s for the kids. hahahaha
Southwest Chicken Grilled Flat Flatbread Sandwich
1 each Flatbread (select your favorite)
1 oz. Slaw (shredded cabbage and carrots, diced green onions)
1-1/2 oz. Corn & Tomato Salsa
1 oz. Julienne Chicken Breast, warm
5-6 each Pickled Jalapenos
1/2 oz. Avocado Ranch Dressing
- Grill the flatbread on a flat top or panini grill
- Place slaw on half of the flatbread; drizzle with avocado ranch dressing
- Top with julienne chicken, corn salsa and pickled jalapenos
- Fold the flatbread over and close with a toothpick
