I enjoyed making the sandwich this week; so much so I kept cooking. Week to week I struggle to find something different to fix for dinner. Like most people we generally eat the same things over and over again. I want to change it up a bit; I get tired of eating the same things all the time. Full disclosure, I don’t love to cook, but I love to eat; hence my love for #fatsnacks and my need for fitness.
This means I troll and troll and troll Pinterest for crafts, meals and things I don’t even need. Pinterest is a life suck but in a good way. With trolling comes Pinterest fails, they sike you up to believe you can make and do these things and your results will look like the picture. That doesn’t always happen but this time it was a winner!
Ingredients: 2 cups of thawed frozen corn – 1 can of black beans – 3/4 cup of salsa – 4/5 chicken breast – 1 packet of taco seasoning – cheese as much as you like
Bake Temp: 350 Cook Time: 45 mins or until your chicken breast are cooked in the middle.
I thawed out my frozen corn and put it in a bowl. Then I rinsed and drained my black beans and poured them on top.
Add salsa to the top. I used fresh chunky salsa, if you don’t like a lot of tomato then a chunky salsa isn’t the one for you.
Stir all of your ingredients up and set them aside for now.
You want your chicken to have flavor so I used some seasoning salt + taco seasoning. I used the same packet you get in the taco kit.
Now you are ready to bring your ingredients together. Get out your foil and spray it with non-stick cooking spray. Make sure it is long enough to get around the chicken with toppings and have room to fold over a couple of times.
Each breast is topped and wrapped in foil individually. I placed five of them in a Pyrex dish in case something leaked out and put them in the oven.
While my bird was cooking I made some Jasmine rice to go with. I added in some sazon for a little more flavor. It also turns the rice orange; the kids think that is hilarious.
I placed the rice on the middle of the plate. I placed my chicken breast covered with my toppings on next. Then I finished it off with my cheese; it melted immediately from the heat.
If you are into grilling you can cook them over an open fire. I bet it taste even better; I can’t wait to give that a try during the warmer months.
