Valentine’s Day Sugar Cookie Chex Mix

Hey Cuties,

Friday has arrived and we are two out from Valentine’s Day, are you over it yet? I’ve been taking care of a kid that hasn’t gotten sick in 11 years. He is better and finally back to school. This gave me time to work on My Girl’s Valentine’s Day treats.  I signed up to bring Chex Mix; I’ve been wanted to make some but hadn’t found a recipe that I liked. After many Google & Pinterest searches I found one that was perfect. Because I love my Cutie’s, I’m sharing it with you.

I had some Sugar Cookie chocolate melts that I’ve been dying to use. This Chex Mix recipe was perfect for me to finally try them out. With anything, tweak and twerk the recipe to your own liking. This is just a guide to get you started. So this is what you need.

Chex Cereal, Chocolate {optional}, M&Ms {optional can sub for sprinkles}, sugar, water, butter, Vanilla {change flavor as you like} and powdered sugar

I’ve included all the measurements in the graphic below.

Set your cereal aside for now and prep your cookie sheet with wax paper or foil and get mixing in another bowl.

Butter + sugar + water + vanilla

I melt the butter in the microwave, add in the sugar and water and put back in the microwave until your mixture is heated and smooth when you stir. Then add in your vanilla.

Now grab your bowl of Chex & pour your mixture and stir like you mean it.

 Grab your bowl of Chex and pour this unattractive concoction over it. Then stir like someone is paying you for it. You want to make sure the cereal is evenly coated.

Once coated put it in the microwave for 4 mins. Stir every minute until the cereal is well glazed. This is where your powdered sugar comes into play.

The easiest way to do this next process is to grab a freezer bag and dump your powdered sugar inside. Then pour your Chex mix in and shake it like a Polaroid picture. {Note: I needed more powdered sugar than the recipe called for. I eye balled it and added more.} Then spread your mixture onto your cookie sheet like I did here.

Chex Mix + Valentine’s M&Ms

If you want to add chocolate now is the time. I added in festive M&Ms because I’m making this for Valentine’s Day. While your mixture is marinating and what not toss your chocolates in the microwave and melt according to the package instructions. {Note: I use this type of chocolate} Pour your melted chocolate into a sandwich bag and snip the tip of the corner then drizzle.

Then your deliciousness should look something like this. As pretty as it was I had to break it up and put it in individual Valentine’s Day bags for the kids at daycare. I had 2o snack bag size baggies for the class.

Nori’s Valentine’s Day favors

The Chex Mix & pretzels were our contribution to the Valentine’s Day party. These are Nori’s Valentine’s Day favors she gave out.

Each kid received their goodies in this heart baggie. The boys got white chocolate lip pops/the girls got pink. Each of them received a gender friendly pencil, bubbles and xoxo erasers. The teachers got the big pink chocolate lip pops you see in the middle. Her cards included a graphic of she and I that simply says “Happy Valentine’s Day”.

      I feel you Jay, you can do a cleaner version for sure. Chex are healthy and gluten free if you’re into that sort of thing. You can skip the powdered sugar, the chocolate and m&ms.
