Friday is here and I’ve got another #FatSnacks Friday just for you.  I should be switching over to more light weight meals that don’t require much time or the oven but I really wanted to try this.  The temps have been pretty solid this week so maybe I will get on some spring meals soon.

 I saw this recipe on Pinterest and I had to try it out. It includes potatoes but it wasn’t heavy at all.  I eye balled this recipe so I don’t have exact measurements. The good thing is it is so simple you can’t go wrong. This means make it your own.


Ingredients: smoked sausage, large onion, potatoes, olive oil, sea salt, ground black pepper, dried thyme and cheese

Oven Setting: 400*F

Get your dish ready: I used a Pyrex dish, lined it with foil and sprayed it with cooking spray.

I have a family of four so I used 2 packs of Kielbasa; I cut it up into rounds. I went for red skin potatoes and I used about 8 of them. They were rather small in size but I wanted to make sure there was a balance of potatoes and sausage. If your potatoes are rather large you might night need as many. I cut my potatoes up so they were about the size of my sausage. I finished it off with one large red onion and cut it up.


Once you’ve done all of that, dump it all into a bowl. Mix it up good with your hands then add in your oil and seasonings. You don’t need a lot of olive oil so don’t overdo it; I put in enough to coat my food a bit. {A couple of TBS} This is where you can make it your own go with seasonings of your choice. I used sea salt, black pepper and dried thyme.

Now it’s time for your twerkout toss all of your ingredients together in the bowl. Remember you want things evenly distributed.


Dump it all into your pan, spread it out a bit. Sprinkle your cheese of choice, I used cheddar. Now it’s time to go in the oven.

Cook time: 45 minutes to an hour

Note: You want to make sure your potatoes are golden brown and cooked all the way.


All done!

Looks good right, serve it with fresh steamed broccoli or the veggie of your choice.
