This Is What Happens When Foil Packets are Featured On #FATSNACKS Friday

Happy #FatSnacks Friday Cuties. Both of the kids are in school and the struggle begins. The struggle of finding suitable meals to make during the week and getting homework done is quite an adjustment.  I need simple yet hearty meals for the family. Only two pieces of salmon are pictured, but I made four. I purchase mine individually packaged from Coscto. It comes with six pieces for like $30. Why is salmon so expensive? I put salt and pepper on the front and back of each piece.

Ingredients: Salmon, Asparagus, Butter, Salt & Pepper, Lemon, Seasoning, Garnish

We love asparagus in my house so I purchased two bundles from the grocery store. You know I don’t do a lot of measuring and all of that when I’m cooking. Just imagine a pinch of this and a dash of that.

I used three lemons and I sliced them up. I put three slices in each foil packet. Then I squeezed fresh lemon juice on everything once it was done.

Butter & Seasoning

I used softened butter, and added seasoning to it and mixed it up. Your seasonings are based on what you want your food to taste like. I went with items I already had. I played up the lemon flavor and use lemon pepper and a few others from the cabinet.

Ready for the oven

I put the salmon in the middle of the foil and put the asparagus beside it. I put three lemons under the salmon and topped everything off with my seasoned butter.  Make sure you have a large enough piece of foil to cover everything.  After that I wrapped everything up in the foil, you have to make sure it is nice and tight. Then I put it inside of my Pyrex dish, you don’t want the juice to spill in the bottom of your oven.

I baked them at 400 degrees for 20 minutes.

All done…

I paired it with white rice, because white rice goes with everything.  I squeezed some fresh lemon on top and a little bit of parsley.  This was the first time I’ve made asparagus in a foil packet. It was delicious and flavorful but it didn’t have the crunch that I enjoy.  Dinner received a thumbs up from the family and I loved it too.

I can really get into the foil packet situation. The clean up is quick and easy too. This is perfect for our busy lifestyle.

    I do a salmon and asparagus one-pan meal. I need to try the foil packs for even easier cleanup. Salmon IS expensive! I buy it from my favorite fishmonger and Coho Salmon is my favorite type. Now I’m craving salmon.
