Let me just say I put it down in the kitchen this week. I’m a Pinterest junkie and they never disappoint me with the recipe options. My food board is legit and you can fight me on that. I’ve had my eye on some deliciously quick meals that don’t have me in the kitchen for a long time. Hello, #FatSnacks Friday!
The Sheet Pan Garlic Parmesan Veggies and Sausage are what I was checking for. In the interest of doing better with this meal planning thing, I had it on the dinner schedule. Bonus: It is a guilt-free meal. The idea is to use whatever veggies you have at home but I was a bit more particular. I had broccoli but I picked up everything else from the store. You know I’m not particular with measurements, so I eyeballed the portions. It looks like enough for us to have two meals worth.
Let’s start with the ingredients:
- sweet bell peppers (red, yellow & orange)
- red skin potatoes
- smoked sausage (Hillshire Farm Beef Kielbasa)
I stuck with the recommended measurements of the seasonings and oil
- 6 tablespoons olive oil
- 1/4 teaspoon red pepper flakes
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1 tablespoon dried oregano
- 1 tablespoon dried parsley
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Topped with shaved Parmesan & Asiago cheese
I used 2 Packs of Hillshire Farm Beef Kielbasa
Chopping up the veggies is the most time-consuming part of this entire process.
I cut each asparagus stalk into three pieces.
Chopped up red skin potatoes
Red, yellow and orange sweet bell peppers.
Fun Fact: Broccoli is my favorite veggie.
Now that everything is chopped up I dumped all of my ingredients into a large bowl and tossed them by hand. I poured in the olive oil and tossed them a bit more.
Before I got my Salt Bae on and loaded up all of the seasonings I lined my cookie sheet with foil and dumped everything onto it.
This time I did the tossing while on the sheet pan.
At this point, I was ready to eat, but it was not ready. I popped it in the oven on 400 and let it cook for 15 minutes.
The first 15 minutes are done, now toss it again. You want everything to cook as evenly as possible. Put it back in the oven for another 15 minutes. My cookie sheet does not have sides so I cupped the foil upward to catch any leftover olive oil. I don’t want to burn down our home.
It is out of the oven and my house smelled heavenly.
I topped it off with shaved Parmesan & Asiago cheese and put it on top of a bed of white rice. The next time I make it I want to add in Brussel sprouts.
