It is the last day in February, we are entering the last month of Quarter 1 of 2018. How are you doing with your goals and resolutions? In one regard I feel like I’m doing good, in another, I feel like I’m failing successfully. When it comes to family I am doing better than ever.
Last month Babe had the idea for us to cook dinner together at least once a week. I’ve never been the best cook but my partner LOVES cooking. He’s been on La Cucina di Sandra Cooking Classes, is always the designated cook when we go on trips, and can happily spend hours cooking up a storm in the kitchen! So, I thought it would be a nice way for all of us to connect, At first, we were shooting for Thursday to be our cook day. That is cool and all, but the way our life is set up, that doesn’t always work out. We now pick the least busy day of the week and cook on that day. We spent some time finding the Best Cookware Sets, got some recipes planned out, and now we’re making time and actually enjoying it!
We pre-plan what we are cooking for the week and I get all the ingredients in advance. This is probably the most important part. We use the Tasty app a lot but I also check my Pinterest Food board for ideas as well.
This week that was Tuesday for us, LittleCuteLips had martial arts class and the Manchild did homework while we were there. After we settled in at home we washed out hands and headed to the kitchen. On the menu was Zesty Lime Chicken Black Bean and Rice. Our one rule is it has be something everyone can eat. Both of the kids have food allergies so we keep that in mind.
Everyone has to participate, Babe took on the job of cutting the onions. He didn’t drop a single tear during the cutting process. He made sure we knew it too.
I was greasing the pan with Olive Oil. LittleCuteLips was grinding up Himalayan salt and Babe was still chopping onions. She was more excited about the grinding process than anything else.
I don’t know why Babe is looking at me like this. I was putting the chicken thighs into the grease.
SN: As you see this is the “I woke up like this look.” The minute I get home my street clothes come off and my lounge wear is put on. I’m addicted to robes so I almost always have one on.
The chicken was looking good, we should have doubled or tripled the recipe. We are all skinny people but we can put some food down.
The Manchild was stirring up the onions in the olive oil. He was so gentle, I think he was worried about being popped by the grease.
After we teased him a bit, Babe got in there and showed him how to do it. They added in the remaining ingredients and then you put the chicken back into the pan. The chicken had to simmer for 30 minutes. So we let the boys finish it off and put LittleCuteLips in the shower. I had to maximize our time so she could still get to bed on time. Once she finished in the shower dinner was ready.
SN: As you see I didn’t even move the mail and magazines off of the counter. This is what everyday living looks like. No staging took place as you can see.
The boys poured the black bean juice in with the beans so it made the rice a bit darker. However, it was delicious and we all enjoyed it. It was my second favorite thing we made together. Thus far we’ve made Fully Loaded Stromboli, Creamy Lemon Chicken, Monte Cristo Grilled Cheese Sandwiches, Chicken and Veggie Stir Fry and now this Zest Lime Chicken.
Cooking together makes for good family bonding time. It forces us to put our devices down, come out of our rooms and do something together. Funny enough we look forward to it now, the kids even have ideas on what we should cook next.
We have fun, we turn up the music and dance around the kitchen. Our son was the DJ this week, but we take turns. The goal is to just have fun. It is as if time stops because we have shut out the world for a couple of hours.
The kids learn to really cook, the Manchild is 13 and although I taught him to cook some basic things. This gives us an opportunity to really teach him how to cook from scratch. The measuring requires a little bit of math especially because we usually increase the recipe.
We eat together at least once a week. Generally, the kids eat together and we eat afterward. Now we eat together at least once a week.
